Tuesday's Dinner: Chicken Cacciatore

This is one of my ultime favorite dinner for weekdays.
It's quick, easy, and healthy--so awesome to see your child chow down mushrooms!



Ingredients:
2 tsp olive oil
1/2 C onion, chopped
2 medium garlic cloves, minced
1 medium green pepper, diced
1 C mushrooms, sliced
1 lb. boneless, skinless chicken breasts, cut into 2- inch pieces
2 tsp dried basil
1 1/2 tsp curry powder
1/2 tsp table salt
1/4 tsp black pepper
28 oz canned diced tomatoes
1/4 C fresh parsley, chopped
cooked brown rice

Instructions:
1. Cook brown rice according to package directions.
2. Heat oil in a large saucepan over medium-high heat. Add onion, garlic, green pepper and mushrooms. Saute until vegetables are tender and mushrooms release juice. Add chicken and saute until golden brown on all sides. Add basil, curry powder, salt, and black pepper; stir to coat.
3. Add tomatoes and bring mixture to a boil. Reduce heat to low, partially cover and simmer 15 minutes. Remove from heat and stir in parsley.
4. Transfer rice to indivisual bowls and spoon chicken mixture over top.
