Friday's Dinner: Spaghetti with Turkey Meatballs

My obsession with turkey meatballs, as opposed to the traditional beef/veal meatballs, started with my then 1-year-old son, Jay. He's always LOVED meatballs, but spaghetti w/ meatballs on the kids menu always had only 1 meatball on top. He'd eat it, love it, and then would want more. Watching that, I always wanted to be able to let him eat as much as he wanted to (he's a tiny little guy, too...).

That meant two things:
1. I need to be able to cook this at home (so that we would not be paying $20 for a child's dinner!).
2. Come up with a way that even with 3 meatballs/sitting, it would be within healthy range of calory/fat intake.

After trying many, many, many recipes, I found "the one" from Weight Watchers.
To add some flavor, the recipe calls for 1/3 lean ground pork and 2/3 ground turkey white.

As the boys and I were sitting down at the dinner table since my husband was called to an emergency meeting (just as my friend Mary has told me that the client of his is a family-curse!), Jay quietly said, "Mama, I am soooo coming home for your meatballs when I'm away in College!"
