Thursday's Dinner: Pork Cutlet (Tonkatsu)

Mmm! This is one of my all-time favorite--especially after so many months of dieting!!
I made it with the soft panko bread crumbs, and that makes the world of difference.

If you live in an area that you don't have access to soft breading, you can just use day-old slices of bread and shred them yourself in a food processor. The result is a lighter and crunchier cutlet.
